how to rack wine and avoid oxydation?
I have been offered an unique opportunity in a french vineyard .Besides my interest into winetasting , I have read quite a bit on the winemaking process and because the winemaker has been a bit impressed by my knowledge of the process , especially the glossary , he has quickly given me a lot of space . I m supposed to rack the wine tomorrow , I have a doubt and I can’t afford to ask the winemaker without losing face . I know it s plain stupid but to avoid oxydation how I am supposed to put the tube into the vat ? is it supposed to always be in contact with the liquid or on the contrary be in the air ?
Go ahead, lose face by asking. Doing it wrong will lose you a LOT more face. You need to know exactly how your employer does things so you can do them the right way, so ask him. Just say you think you know how to do it, but you want to be really sure so you’d like a demo. Other than that, it makes sense for the tube to always be in contact with the liquid. If the tube is in the air, a lot more air will contact the wine coming out of the tube
